Cooking with Mushrooms à la Française
Join us for a French-themed culinary feast and learn how to make an exquisite menu that includes MOREL MUSHROOM PATE ON GARLIC BREAD ROUNDS to start. The main course will feature a CHANTERELLE AND GOAT CHEESE STUFFED CHICKEN BREAST WITH A LEMON WINE BUTTER SAUCE. We will finish the evening with a delectable BANANA CROISSANT BREAD PUDDING WITH VANILLA CARAMEL SAUCE. Chef Ian will bring his teas and coffee infused with mushrooms. Wine will be served with dinner.
Chef Ian Vair is a natural born Vermonter with classic French culinary training. His experience extends into multiple regions around the country. Southwestern, Caribbean, Chesapeake, Italian, and Asian cuisines have all been part of his fieldwork. Combined with classical French fundamentals, Chef Ian brings a dynamic fusion of flavors, flare and fun to the table.
